3 tablespoons butter, divided

In a large shallow dish, whisk together the eggs, milk, pumpkin puree, granulated sugar, cinnamon, ginger, and nutmeg. Dip each slice of French bread into the egg mixture until well coated.

Melt 2 tablespoons of butter in a large skillet over medium heat. Add half of the bread slices to the skillet and cook until golden brown, about 2 minutes per side. Repeat with the remaining butter and bread slices.

Dust with confectioners’ sugar and serve warm.

2) Cranberry Orange Scones

Ingredients:

2 cups all-purpose flour

1/4 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

Zest of 1 orange

1/2 cup (1 stick) cold unsalted butter, cut into small pieces

1 cup dried cranberries

1/4 cup orange juice

1 egg beaten with 1 tablespoon milk, for egg wash Directions:

Preheat oven to 400 degrees F (200 degrees C).

In a large bowl, whisk together the flour, sugar, baking powder, salt, and orange zest. Add the cold butter and rub it into the flour mixture with your fingers until it resembles coarse crumbs. Stir in the cranberries and orange juice until well combined.

Turn out onto a floured surface and knead gently for a few turns. Pat into an 8-inch circle and cut into 8 wedges. Place on a baking sheet lined with parchment paper. Brush the tops with the egg wash.

Bake for 15 to 20 minutes, or until golden brown. Serve warm or at room temperature.

3) Eggnog Pancakes

Ingredients:

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon ground nutmeg

Dash of cinnamon

1/2 cup eggnog

1/4 cup milk

1 tablespoon butter, melted

1 egg Directions:

In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, and cinnamon. In another bowl, whisk together the eggnog, milk, and butter. Add to the dry ingredients and mix until just combined.

Beat the egg and add to the batter. Stir just until combined.

Preheat a griddle or frying pan over medium heat. Lightly grease with cooking spray or butter. Pour 1/4 cup batter onto the griddle for each pancake. Cook for 2 to 3 minutes per side, or until golden brown. Serve warm with butter and syrup.
